Meatless Mondays | Orzo Salad

Orzo, a type of pasta shaped like a grain of rice, makes a great meat substitute and is more fun than the standard pasta. This springy salad can be made as a main dish, with some grilled veggies on the side. 

Ingredients:

1.5 cups orzo

1 large tomato

1 chunk feta cheese

2 tbsp. olive oil

1 lemon - juiced

salt

pepper

1 bunch parsley

Putting it all together:

Boil orzo in well salted water until al dente - drain.

Chop tomato.

Crumble cheese.

Chop parsley.

Mix cooked orzo with remaining ingredients and season with salt and pepper.
